Work experience: I started working in catering at 16 years of age on Anglesey. After Gaining 2 Years practical experience I went to Catering college and gained Chef Qualifications. Fresh from College I worked in various Pubs, Restaurants and Hotels in Cheshire. Then Started at the BEST WESTERN Forest Hills as a Sous Chef, being promoted through the years to my current position of Head Chef.

Tell us about your current menu: We pride ourselves on having menus using Fresh and Crisp local produce. We really show case the skills of all the Chefs on the Gourmet nights throughout the year. With one of the most popular being the Cheshire Menu at the Gourmet Night, when we take advantage of the wealth of excellent Cheshire Produce we have.

What is your favourite dish on your menu and why: My self as a Red Meat Eater, my favourite is a nice 10oz Pave of Rib Eye finished with a nice sauce, peppercorn, Gorgonzola, mmmmmm. Also a light Fish Dish of Monkfish, smoked bacon, garlic, Red Wine Thyme Jus with seared Scallops.

What inspires you: Local Fresh fish, and fresh meat which with the quality, it just inspires you to be creative on sight of it.

Which is your favourite restaurant? (not your own): I don't have a favourite, I like to try different establishments whenever possible
