Meet the Chef - AJ Bousselham
Hometown: Rabat, Morocco
Work experience: Years of watching & helping my family cook in Morocco and then learning the trade professionally at different places in Manchester; JasJasJas, Selfridges, Piccolino's, Loch Fyne and others. I have met so many great people and learnt so much and am still learning!
Tell us about your current menu: It is a selection of Moroccan and Lebanese dishes. Basically it is tasty, wholesome food at affordable prices. I really want people to have the chance to forget their worries for a short time and dine as if they were a guest in a Moroccan palace.
What is your favourite dish on your menu and why: African chicken (rice, chicken, chick peas, sultanas & spices) . It is typically Moroccan because it mixes sweet dried fruit with meat which is an ancient tradition inherited from the native Berber culture in North Africa. I like the idea that the concept has travelled all the way from the Sahara to Lancashire!
What inspires you: My family!
Which is your favourite restaurant? (not your own): Anywhere that serves fresh, authentic Italian food

Welcome to Ashton's new exciting Cafe Mozaic. Our company ethos is to provide you with delicious and authentic Moroccan and Arabic food that is great value for money. A variety of meat, fish and vegetarian dishes are freshly prepared every day by our Moroccan chef to eat in or take away.
Abdeljalil, known to everyone as AJ, came to England from Morocco about six years ago with his wife Esther who was born and brought up in Stockport. After working in a variety of top restaurants around the Manchester area, AJ has realised his long-term ambition to run his own delicatessen and cafe. He is passionate about Mediterranean cuisine and prepares a variety of fresh dishes every day for either take away or to eat in. He offers a range of hot and cold drinks, including authentic Moroccan mint tea. Outside functions can be individually catered for on request.
