Work experience: self taught - always loved to cook. From being made redundant in the travel industry post 9/11, 1st restaurant inkaa,in Horwich then moved to open new one in preston (duk) with pond following 18 months later


Tell us about your current menu: Unusal world tapas style cusinie based on a Peruvian theme.


What is your favourite dish on your menu and why: Peruvian stew - Its one of a kind! It appeard on BBC radio Lancashire for children in need 2008 a fabulous blend of spice, fruit and vegetables


What inspires you: Unusual places.

Which is your favourite restaurant? (not your own): havent got one

Big Brother or Question Time: neither, one too insular the other dull you guess which!
