Piste's Super Baked Eggs
The ultimate hearty, guilt free brunch!
Serves 3/4
Ingredients:
250g sweet potato
240g sliced red onion
50g kale
25g spinach
5g chopped coriander
2g garlic purée
10ml extra virgin olive oil
1 lime juiced
Chives to garnish
Method:
Rub the potatoes in olive oil, salt and pepper and bake in the oven at 180 degrees for 35-45 minutes, depending on the size, until soft.
Leave to cool slightly while you fry the onions in olive oil for 5 minutes or until soft, add kale and spinach, fry until greens begin to wilt. Remove from heat.
Cut potatoes in half and scoop out the potato into a bowl with the onions, kale and spinach.
Add lime juice, seasoning, coriander and garlic.
Mash.
Place into oven proof dish/dishes. Make 8 small wells and break eggs in.
Place dishes in to a really hot oven or under the grill until eggs are cooked to your liking.
Garnish with chives.
